BEEF AND BLACK BEAN TOSTADAS
Beef and Black Bean Tostadas
  • 8 ounces extra lean ground beef (93% lean
  • 3 cloves garlic, minced
  • 1 tablespoon no salt added chili powder
  • 1 teaspoon ground cumin
  • 1/2 cup unsalted beef broth or stock
  • 1 tablespoon chipotle hot sauce, such as Tabasco brand
  • 1 (15 ounce) can no salt added black beans, drained and rinsed
  • 8 packaged corn tostado shells, warmedl
  • 1 cup chopped tomato
  • 1/2 cup sliced green onions
  • 1/2 ripe avocado, peeled, seeded and diced
  • 1/2 cup chopped cilantro
  • 1/4 cup unsalted pepitas (pumpkin seeds)  

Sauté the ground beef and garlic in a large skillet or sauté pan over medium heat until the beef is no longer pink, about 5 minutes. Sprinkle the chili powder and cumin over the mixture and sauté 1 minute longer.

  Add the broth and hot sauce and simmer 2 minutes. Stir in the beans and simmer 4 minutes. Spoon the mixture over the heated tostada shells and top with the tomato, green onions, avocado, cilantro and pepitas. Makes 4 servings.
