HEARTY HAM & NAVY BEAN SOUP
Hearty Ham & Navy Bean Soup
  • 1 tablespoon olive oil
  • 2 carrots, thinly sliced
  • 1 cup chopped onion
  • 1 stalk celery, thinly sliced
  • 4 cloves garlic, minced
  • 1-1/2 cups unsalted chicken broth or stock
  • 1 cup water
  • 4 ounces low-salt ham steak, finely diced
  • 1 (16 ounce) can no salt added navy beans, drained
  • 2 cups packed fresh baby spinach leaves
  • Freshly ground black pepper, optional  

Heat oil in a large saucepan over medium heat. Add carrots, onion and celery and sauté 5 minutes. Add broth and water and bring to a simmer. Simmer 8 minutes or until vegetables are tender.

  Stir in ham and navy beans and simmer 5 minutes or until heated through. Stir in spinach leaves and simmer 1 minute or until spinach is wilted. Ladle into shallow bowls and top with pepper to taste.
